Texas Caviar

This recipe came from one of my sisters...I don't remember which one. The name kind-of cracks me up, but it makes some tasty stuff!

1 can black beans, rinsed and drained
1 can white corn, rinsed and drained
1 green onion, chopped
1 ripe avocado, diced
1 large handful of cilantro, chopped
1 ripe tomato, diced

2 cloves fresh minced garlic
1/4 to 1/2 c olive oil
1/4 to 1/2 c red wine vinegar
Fresh ground salt and pepper


Combine all of the above to taste and serve with tortilla chips.
