Ingredients:
6 eggs
1/2 c rice flour
1/4 c cornstarch
1/4 c tapioca flour
1 c milk
1 t vanilla
dash salt
1/3 cube butter
1/3 cube butter
Directions:
- Preheat oven to 420
- Place butter in 9 x 13 pan and put in the oven until melted
- Mix all the other ingredients
- Pour batter over butter, and bake for 20 minutes or until edges are browned
- Serve with lemon juice and powdered sugar

Are these kind of like crepes?? Do I make them thin? These look so good!!
No, I don't really know what to compare them with. Thomas grew up having them, and I had tried them in my gluten days.
You just pour all the batter into the pan at once. As it cooks, it kind of puffs up all along the sides (even above the edge of the pan). You cut it in sections to serve. Our family devoured one recipe, so you might want to make more.
By the way, Thomas didn't even realize it was gluten free until I pointed out that I was eating it. He thought it was his family's recipe.

I had a good little laugh about Thomas not realizing they were GF until you pointed out that you were eating them. It's so funny how they forget, and also how they people assume that GF = gross. :)
